Nourishing Bone Broth
It's flu season... and that means keeping nourishing medicinal foods on hand that support the immune system and rebuild the body.
I store organic whole chickens in my freezer, and pull one out on any given week when I want chicken for my recipes.

TO MAKE A HEALING BONE BROTH: (use any of the following)
1 whole frozen or fresh chicken
Onions w/ peels, quartered
Carrots w/ skin and ends, chopped in thirds
Celery stalks w/ ends, sliced in half
Fresh or dried herbs (plenty of all your favorites)
Salt & pepper
Fresh lemon, quartered
Fresh turmeric and ginger roots (a small piece will do)
Garlic cloves
Filtered water to cover the whole pot
Place everything in a crock pot and set on low just before bed. Strain off in the morning. Alternatively, start it first thing and strain in the evening.
Set the chicken aside and shred the meat for your week. Strain off everything else and discard. Allow the jars of broth to cool completely before refrigerating or freezing.
Warm the broth before each use in pot, to preserve the nutrients (no microwaving).
My husband had the flu a couple weeks ago, and I fed him bowls of homemade bone broth, and sprouted grain toast for simple yet nourishing foods that his body could handle.
